Noble rot (Botrytis cinerea)

A fungus that punctures grape skins, allowing water to evaporate and concentrating sugar, acid and flavour. It also produces its own aromas of honey, saffron and dried apricot. Requires damp mornings and dry afternoons; otherwise it becomes destructive grey rot.
