Storing wine
Most wine sold today is made to be drunk within a couple of years, and for that almost any cool, dark, stable cupboard is fine. The advice gets more demanding only when the timescale does.
A cupboard that sits at a steady 17°C is better for wine than a cellar that swings between 8°C and 22°C across the year, even though 17°C is further from the textbook 12°C. Repeated expansion and contraction is what works wine past a cork; a slightly warm constant simply matures it a little faster.

Cork, screwcap and the rest

What matters, in order
- Temperature stability. The single biggest factor, and the one most often overlooked in favour of hitting an exact number.
- Average temperature. Around 12°C is the conventional target. Warmer ages wine faster; cold merely pauses it.
- Darkness. Light strike is a real, documented chemical reaction, and pale and clear bottles are especially vulnerable. Sparkling wine suffers noticeably.
- Position, for cork. On its side keeps the cork wet. Irrelevant for screwcap, which cannot dry out.
- Humidity, for cork. Roughly 60–80%. Too dry risks the cork over years; too damp only ruins the labels.
- Vibration. Last, and WineHQ says so deliberately. The evidence that ordinary household vibration damages wine is much weaker than the storage industry implies. A compressor or a busy road is the case worth addressing.
How long does an open bottle last?
Longer than most people think, and the honest answer is that it depends on how much air is in the bottle rather than how many days have passed. Recorked in the fridge, most whites and lighter reds are perfectly good for three to five days, and fortified wines for weeks to months. The wine does not become unsafe — it becomes progressively duller as it oxidises. Trust your nose over any number.
The two things that genuinely help are reducing the air in contact with the wine and keeping it cold. A half-empty bottle standing at room temperature is the fastest way to lose it; the same bottle in the fridge, upright with the cork in, will still be pleasant days later. Reds included — you can always warm the glass in your hand.
