Red grape variety
Broad-leaved Melnik
A Struma Valley red found essentially nowhere else, tannic and slow to come round.
What is Broad-leaved Melnik?
Broad-leaved Melnik ripens very late and carries firm tannin, so it is traditionally given extended ageing before release and can be austere young.
Melnik 55 is a crossing bred from it for earlier ripening, and the two are often both called simply "Melnik" — a distinction worth making before drawing conclusions about the style.
The Struma Valley is Bulgaria’s warmest region, sheltered enough by the surrounding mountains to ripen a variety that would not succeed elsewhere in the country.
The Struma Valley in south-western Bulgaria, around the town of Melnik, in a pocket warm enough to ripen it. Almost the entire world planting is within a few dozen kilometres.

What to eat with it
Ranked by WineHQ's pairing engine, which reasons from the structure of the dish.
Roast chicken
Works because the protein and fat in the dish soften the tannin and let the fruit show.
Beef stew
Works because the dish is rich, and acidity cuts through fat and refreshes the palate.
Fillet steak
Works because the finished dish, not the raw ingredient, sets the target.
Lamb

How to serve it
Temperature
15–17°C
59–63°F · Cellar cool
Most modern rooms are warmer than this. Twenty to thirty minutes in the fridge before serving usually gets a red into range.
Decanting
Worth decanting
Young, firmly tannic wine often softens noticeably with an hour of air — the most reliable case for decanting.
Glass
Bordeaux glass
A taller, narrower bowl directs a tannic wine past the front of the palate. The effect is real but modest.
Ageing
Structured wines made from this grape commonly improve with age, though everyday bottlings do not.
Broad-leaved Melnik from the Struma Valley needs several years for its firm tannin to resolve and holds for a decade or more. Melnik 55, the earlier-ripening crossing often sold under the same short name, is softer and made to be drunk sooner — worth establishing which is in the bottle.
