Xarel·lo is the backbone of Cava, contributing structure and the capacity to age on lees for years.

It is increasingly bottled as a still varietal white, where its texture and savoury herb character show clearly.

The Vitis International Variety Catalogue, maintained by the Julius Kühn Institute, holds this variety as accession 13270 under the prime name XARELLO, with berry skin colour blanc and country of origin spain, and the pedigree "HEBEN X BRUSTIANO FAUX". Checked 2026-08-17.
