Temperature control and modern white wine
Refrigeration and stainless steel made fresh, aromatic white wine possible in warm climates.
What happened
Before reliable temperature control, fermentation in a warm climate ran hot, which stripped aromatics and produced coarse, often oxidised white wine.
Stainless steel tanks with cooling jackets changed that completely. Cool, controlled fermentation preserved delicate aromas for the first time.
The consequences were geographic: warm regions from Australia to Spain could suddenly make fresh white wine competitively, and categories like modern Rueda and Marlborough Sauvignon Blanc simply could not have existed before it.
It is arguably the single most consequential winemaking technology of the twentieth century, and it is rarely given the credit.
