How to chill a bottle quickly

Ice and water beats ice alone by a wide margin, and beats the freezer on safety. Why, and what not to do.

Overview

The fastest safe method is a bucket of ice and water, not ice alone. Water conducts heat roughly twenty times better than air, so a bottle surrounded by iced water is in contact with a cold medium across its whole surface, while a bottle sitting in dry ice cubes touches cold at a few dozen points and is otherwise insulated by air.

The practical difference is large: roughly twenty minutes against something closer to an hour for the same temperature drop.

Adding a couple of tablespoons of salt to the water lowers its freezing point and therefore the temperature of the bath, which speeds things up further.

The freezer works and is the method most likely to end badly. Wine expands as it freezes, and a forgotten bottle pushes its cork out or splits. If you use it, set a timer — not a mental note.

What does not work: running the bottle under a cold tap, which is barely cooler than the room; and putting it in the fridge and hoping, which takes a couple of hours from a warm start.

Step by step

  1. 1 Half ice, half water

    Enough to cover the bottle to the shoulder. Ice alone is much slower.

  2. 2 Add salt if you are in a hurry

    A couple of tablespoons drops the bath below zero.

  3. 3 Give it a turn occasionally

    Moving the bottle keeps cold water against the glass instead of a warmed layer.

  4. 4 Check at twenty minutes

    Neck-to-base temperature evens out quickly once out of the bath.
