What wine goes with bloomy-rind cheese?

Soft, white-rinded and mushroomy — Brie, Camembert and their relatives, where fat and umami rise sharply with ripeness.

Why it works

The surface mould that makes the rind also breaks the paste down from the outside in, so a ripe bloomy-rind cheese is far richer, more mushroomy and more pungent than a young one.

The high butterfat wants acidity, and sparkling wine handles it best of all. Champagne with Brie is a cliché that happens to be structurally correct.
