What wine goes with carbonara?

Egg, pecorino, guanciale and black pepper — salt and fat with no acidity at all.

The short answer

Why it works

There is no tomato and no cream in a real carbonara — the sauce is emulsified egg yolk and rendered pork fat, thickened with hard sheep’s cheese. The result is one of the fattiest, saltiest dishes in the catalogue and one of the least acidic.

That makes the wine’s job simple and non-negotiable: bring acidity. The black pepper is a bonus that a peppery white or a light red can meet directly.

Carbonara is fat and salt with almost nothing to cut them: egg yolk, hard cheese, cured pork and pasta. There is no acidity in the dish at all, which is unusual for Italian food and changes what the wine has to do.

The wine therefore has to supply the acidity itself. A crisp Italian white — Gavi, Verdicchio, Soave Classico, Frascati — does this well, and the traditional Roman pairing with a white from the Lazio hills is well judged.

A light, high-acid red served cool also works, and Barbera or a Frappato-based red handles the guanciale better than a white does.

What will not work is anything heavy, oaked or low in acidity: the dish is already rich, and the wine adding more richness leaves nothing to refresh the palate.

The tricky part

Extreme salt and fat with zero acidity in the dish. A soft or oaky white collapses; a tannic red turns metallic against the pecorino.
