Why it works
Hard aged cheeses have enough fat and protein to soften tannin, which is why they are the cheeses that genuinely work with red wine.
The general truth about cheese and wine is worth stating plainly: white wine works far more often than red. Hard cheese is the main exception.
Very mature cheddar develops crystalline savouriness and tyrosine crunch, and stands up to a serious red or to an oxidative fortified wine.
Cheddar is salty, fatty and — when properly aged — high in umami, with a crystalline crunch from calcium lactate that indicates real age. All three of those interact strongly with wine.
Salt and fat both soften tannin, which is why mature Cheddar is one of the few cheeses that genuinely suits a structured red. Umami works the other way and makes tannin taste harder, so the balance depends on how aged the cheese is.
The traditional English answer is Port, and it works: sweetness and alcohol both counter salt, and the fruit stands up to the intensity. A dry alternative is a ripe Cabernet or a Rioja Reserva.
The general "red wine with cheese" convention is much weaker than it sounds. Many cheeses pair better with white wine, and Cheddar is one of the genuine exceptions rather than an example of the rule.
