Why it works
Frying delivers fat and salt in the same mouthful, and the crust adds crunch without adding acidity. The dish gives the palate nothing to reset with, so the wine has to.
Sparkling wine is the standard answer for two independent reasons: high acidity cuts the grease, and carbonation physically lifts it off the palate. It is not a novelty pairing.
Fried chicken is a fat-and-salt problem, and the classic answer — sparkling wine — is technically well founded rather than merely fashionable.
Two things are doing the work. High acidity cuts through frying fat, and the carbon dioxide in a sparkling wine scrubs the palate mechanically between mouthfuls in a way still wine cannot. Champagne, Crémant, Cava and English sparkling all do this.
If the coating is heavily spiced, alcohol amplifies chilli heat, so a lower-alcohol sparkling wine or an off-dry Riesling handles a hot version better than a dry, high-alcohol one.
