Why it works
A proper ragù is a meat dish with tomato in it, not a tomato sauce with meat: hours of simmering, often with milk or cream, produce something deep, savoury and only moderately acidic.
That makes it more forgiving than a marinara. There is enough fat and protein to absorb some tannin, so a medium-bodied structured red works where it would not with a simple tomato sauce.
A proper ragù is a long-cooked meat sauce with milk or cream, soffritto and a modest quantity of tomato — considerably less acidic and considerably more savoury than the tomato sauce most people imagine.
That changes the target. Where a bright tomato sauce wants matching acidity, a ragù wants savoury depth and moderate tannin, and the traditional Emilian pairing is Lambrusco or Sangiovese di Romagna rather than anything sharper.
Long cooking concentrates umami, which makes firm tannin taste harder. A medium-bodied red with soft tannin and good acidity is the reliable choice.
