Why it works
Reducing wine concentrates its acidity, its glycerol and whatever savoury depth the stock brought. The result is more intense than plain steak and slightly sweeter, and it wants a wine with real depth rather than merely tannin.
The old advice to drink the wine you cooked with is roughly sound here, and for once the reason is structural rather than sentimental: the sauce already tastes of that wine’s acid and fruit register.
