What wine goes with stilton?

Crumbly English blue, salty and mineral — and the reason Port exists on so many Christmas tables.

The short answer

Why it works

Blue veining brings a sharp, mineral bitterness on top of very high salt, and Stilton is drier and crumblier than the French and Italian blues.

Sweetness is what balances it, and the mechanism is the same one that makes salted caramel work: sugar suppresses the perception of both salt and bitterness. Port with Stilton is not merely a tradition — it is the technically correct answer.

Blue cheese is the most aggressive pairing challenge in a normal meal: intensely salty, high in fat, and carrying the sharp, penetrating flavours produced by Penicillium roqueforti.

Sweetness is the counter. Sugar balances salt directly, and a sweet wine with enough acidity to stay fresh will meet the cheese rather than being flattened by it. Port with Stilton and Sauternes with Roquefort are both instances of the same principle.

A dry wine has to be exceptionally powerful to survive the encounter, and most are not. This is one of the few pairings where the traditional answer is close to the only good one.

The tricky part

Very high salt plus real bitterness. A dry red is fighting both at once and will taste harsh and metallic.
