How this was worked out
Formula
t = −τ × ln((T_ambient − T_target) ÷ (T_ambient − T_start))
Where
- T_start = 5 °C — Current temperature. How cold the wine is now.
- T_target = 16 °C — Target temperature. Where you want it to be.
- T_ambient = 20 °C — Surroundings. The temperature of the room the bottle is standing in.
- τ = 150 min — Time constant. How long it takes to close roughly 63% of the remaining gap. Larger means slower.

- Gap to close at the start: 20 − 5 = 15 °C
- Gap remaining at the target: 20 − 16 = 4 °C
- Time: −150 × ln(4 ÷ 15) = 195 min — Rounded to a granularity the model can actually support.
What this assumes
- Models warming as exponential approach to the surrounding temperature — Newton’s law of cooling, run in the other direction.
- Time constants are calibrated against practical experience rather than measured.
- A standard 750 ml bottle standing still.
Where it stops being reliable
- Warming is slower than people expect. Still air conducts heat poorly, which is exactly why chilling in an ice bath is so much faster than chilling in a fridge.
- Never warm wine in a microwave or in hot water. Both heat unevenly, and heat above about 30°C damages aromatics irreversibly.
- Direct sunlight will warm a bottle and also risks light strike, which produces a genuine and permanent fault.
- Wine in a glass also warms from the room while you drink it — around 2°C in ten minutes — so pouring slightly cool is usually right.
