Palo Cortado

The rarest classic sherry style: the delicacy of Amontillado on the nose with the body of Oloroso on the palate.

What is Palo Cortado?

Palo Cortado traditionally arose when a barrel destined for Fino spontaneously lost its flor and took a different path — a happy accident marked on the cask with a cut chalk line, which is where the name comes from.

The classic description is an Amontillado nose with an Oloroso palate, and it genuinely does sit between the two.

Much modern Palo Cortado is made deliberately rather than discovered, and the category’s boundaries are correspondingly debated within the region.

Ageing

Sold at the age it has reached and stable indefinitely unopened — oxidative ageing has already done everything oxygen can do. Once opened it holds for weeks rather than the days a Fino allows.

Built for it. The best examples change substantially and are often better at twenty years than at five. The worst examples of the same style are not, which is why the producer matters more here than anywhere.

Why

  • Favours ageing. Acidity. High. Acidity is the single best predictor of longevity across every style — a low-pH wine is more stable both chemically and microbiologically.
  • Favours ageing. Fortification. Fortified. Alcohol above about 15% is itself a preservative, and oxidatively aged styles have already been through the reaction that ages everything else.

What this cannot tell you

  • Age is not improvement. A great many wines are made to be drunk within two years and get worse, not better, with time — and there is no shame in a style that is at its best young.
  • WineHQ does not publish drinking windows. A window like "2032–2041" requires knowing the producer, the vintage and how the bottle was stored, and a style-level model knows none of those.
  • Bottle variation at twenty years is large, especially under cork, where oxygen ingress differs between individual closures from the same batch.
