Sweet white
Unambiguously sweet wines, concentrated by noble rot, freezing, drying or arrested fermentation.
What is Sweet white?
The defining requirement of a great sweet wine is acidity. Without it, sugar is merely heavy; with it, the wine stays lively however sweet it is.
The four main routes to concentration are noble rot (Sauternes, Tokaji), freezing (ice wine), drying the grapes (Vin Santo, passito) and simply stopping fermentation early.
A practical rule: the wine should be at least as sweet as what you serve it with, or the food will make it taste sour.
Sweet white wine is made by concentrating sugar in the grapes or by stopping fermentation before the yeast has consumed it, and the method leaves a clear signature.
Noble rot — Botrytis cinerea — punctures the skin so water evaporates while sugar and acid concentrate, and it adds its own aromas of honey, saffron and dried apricot. Drying grapes on the vine or on racks concentrates without those aromas. Freezing them, as for icewine, concentrates purely physically and gives the cleanest, most overtly fruity result.
Acidity is what separates a great sweet wine from a cloying one, and it is why the classic regions are cool ones. Sugar without acid is syrup.
The category is deeply out of fashion and correspondingly good value. Sauternes, Tokaji, German Auslese and Coteaux du Layon all sell for considerably less than their quality and rarity would suggest.
Half-bottles are the sensible format, and these wines keep for several days once opened — much longer than dry wine, because sugar and acid both act as preservatives.

Built for it. The best examples change substantially and are often better at twenty years than at five. The worst examples of the same style are not, which is why the producer matters more here than anywhere.
Why
- Favours ageing. Acidity. Very high. Acidity is the single best predictor of longevity across every style — a low-pH wine is more stable both chemically and microbiologically. Some of the longest-lived wines made have nothing else going for them.
- Favours ageing. Sugar. High residual sugar, which is a preservative. Botrytised and fortified sweet wines are among the longest-lived made.
- Favours ageing. Concentration. Full-bodied and concentrated. This correlates with longevity rather than causing it, but a wine with more to lose takes longer to lose it.
What this cannot tell you
- Age is not improvement. A great many wines are made to be drunk within two years and get worse, not better, with time — and there is no shame in a style that is at its best young.
- WineHQ does not publish drinking windows. A window like "2032–2041" requires knowing the producer, the vintage and how the bottle was stored, and a style-level model knows none of those.
- Bottle variation at twenty years is large, especially under cork, where oxygen ingress differs between individual closures from the same batch.
