Oxidation
Wine that has had too much contact with air — browning in colour, with bruised-apple and nutty notes in place of fresh fruit.
What you notice
Smell

What it is
Oxidation is context-dependent rather than always a fault, which is why it sits awkwardly in a list of things that have gone wrong.
In a young Sauvignon Blanc it is a clear fault: the wine has lost the freshness that was its point. In Oloroso sherry, Madeira, Vin Jaune and Tawny Port it is the deliberate objective, and those wines are made oxidatively on purpose.
The question is therefore never "is this wine oxidised?" but "is this wine oxidised when it should not be?"
A mature wine developing gently is not the same thing as a spoiled one. Bricking at the rim of a fifteen-year-old red is normal maturation.
What causes it
- A failed or dried-out cork letting air in over time.
- An open bottle left too long.
- Poor handling during winemaking or bottling.
- Long storage in warm conditions, which accelerates oxidative reactions.
Can I fix it?
No — nothing will fix it
No. Oxidation is a one-way chemical reaction and there is no domestic way to run it backwards.
What you can do
- There is no way to reverse it.
- A mildly oxidised wine may still be usable for cooking.
- If a bottle you have just opened is clearly oxidised and it is not a style meant to be, return it.
- To prevent it in an opened bottle: re-cork immediately, refrigerate, and consider a vacuum stopper or inert gas.
What does not work
Published because a reader holding a spoiled bottle has usually already been told to try one of these. Correcting the specific wrong advice is more use than stating the right answer beside it in silence.
- Re-corking and refrigerating
- Slows what has not happened yet, which is worth doing. It does nothing about what already has.
- Vacuum stoppers and inert gas
- Genuinely useful before the damage, useless after it. Neither reverses acetaldehyde that has already formed.
- Adding a fresh splash of the same wine
- Dilutes the oxidised character slightly and oxidises the fresh wine. You end up with more of a worse thing.

Not a safety problem
Unpleasant, not harmful. You can drink it; you may not want to.
Yes. Oxidation is a chemical change, not a spoilage organism — it is the same reaction that browns a cut apple, and it produces nothing your body has to deal with. What it destroys is the wine’s fruit and freshness, which is a reason not to enjoy it rather than a reason not to drink it.
Oxidation is a change, not a hazard. A bottle that has been open for a very long time and has grown a visible film or mould on the surface is spoiled rather than merely oxidised, and should not be drunk.
Can I take it back?
If a young wine arrives already oxidised, yes — that is a fault. If you left the bottle open for a week, that is not the retailer’s responsibility.
