Carbonic maceration

A technique where whole bunches ferment intracellularly under carbon dioxide before being pressed. It produces very soft tannins and distinctive aromas of banana, bubblegum and kirsch.

In more detail

Most associated with Beaujolais. The banana note comes from isoamyl acetate generated by the process, not from the grape.
