Maceration

Contact between juice and solids. Length and temperature determine how much colour and tannin end up in the finished wine, which is the main lever a winemaker has over a red wine's structure.

Cold soaking before fermentation extracts colour with less tannin; extended post-fermentation maceration extracts more tannin.
