Traditional method

The method used for Champagne, Cava, Crémant, Franciacorta and English sparkling wine. A base wine is bottled with sugar and yeast, ferments again in the sealed bottle, and then ages on the resulting lees.

Formerly called méthode champenoise, a term now legally restricted to Champagne itself.
