What is Ribolla Gialla?

Made conventionally, Ribolla Gialla is light, high-acid and citrusy. Fermented on skins in the Friulian and Slovenian tradition, it becomes deeply coloured, tannic and savoury.

It has thick skins and high acidity, which is precisely what extended skin contact needs.
