Why it works
Pickle and chutney are both sharply acidic and noticeably sweet, on top of very salty cheese and ham. It is a far more aggressive plate than it looks.
The vinegar is the killer: a red wine tasted after a mouthful of Branston tastes thin and metallic. A high-acid white, a dry cider-adjacent Chenin, or something with a touch of sweetness copes far better.
