Handling sparkling wine

Keeping the bubbles where they belong, before and after opening.

Overview

Chill it properly before opening. Cold wine holds carbon dioxide better and foams far less.

Do not shake it, obviously — but also avoid carrying it upright in a warm car, which does something similar more slowly.

Pour at an angle into a tilted glass, as with beer, and pour in two stages if the foam rises.

A proper sparkling stopper genuinely works and will keep an opened bottle fizzy for a day or two. The teaspoon-in-the-neck trick does not.

Flat sparkling wine is not spoiled, just disappointing. It is still fine for cooking or for a spritz.
