Pinot Noir with dark cherry and thyme rather than the red-fruited delicacy of Burgundy — riper, more structured, and with the acidity the diurnal swing preserves. Also increasingly good Riesling and Pinot Gris.
About Central Otago
Central Otago Pinot Noir has more colour, fruit weight and structure than most cool-climate examples, with dark cherry, thyme and a wild herbal note.
Sub-regions such as Bannockburn, Gibbston and Bendigo differ noticeably; Gibbston is the coolest and produces the most delicate wines.
The southernmost commercial wine region in the world, and the only one in New Zealand with a continental rather than a maritime climate — the Southern Alps take the rain out of the westerlies before they arrive. Days are hot, nights are cold, and the growing season is short enough that frost at both ends of it is a permanent concern.
Almost the entire reputation rests on Pinot Noir, which is unusual concentration for a region of this size. The sub-regions differ more than the single name suggests: Bannockburn and Bendigo are warmer and give denser wine, Gibbston is the coolest and ripens up to three weeks later.

Vintage matters
Ripeness is usually achieved but not effortlessly, and rain or heat at the wrong moment leaves a clear mark on the wine.
- Latitude. At around 45°, ripeness is usually reached but is not a formality.
- Spring frost. A frost after budburst destroys the shoots carrying that year’s crop. The vine regrows, but the secondary buds are less fruitful, so the effect is a small vintage rather than a poor one.
- Rain shadow. Mountains intercept the rain before it arrives, which makes the growing season dry and predictable — and usually means irrigation decides water supply rather than weather.
- Continental influence. No large body of water to buffer the extremes. Continental places have hotter summers, colder winters and sharper frost risk, all of which widen the gap between years.
