Budburst
The moment the vine wakes up — and the point at which a single cold night can remove a year’s crop.
The short answer
Budburst is when dormant buds swell and open, producing the first green shoots. It is triggered largely by soil and air temperature after the vine has met its winter chilling requirement, and it marks the start of the vine’s vulnerability to frost.
Overview
Before budburst a dormant vine tolerates severe cold. After it, the emerging green tissue is killed at around −2°C.
Timing varies by variety, by site and by season, and there is no calendar date that holds globally — or even across one region.
How it works
The mechanism, at the scope it has actually been established.
The vine requires a period of winter chilling before it will respond to warmth at all. Where winters are too mild, budburst can become uneven, which is a real constraint on viticulture in subtropical regions.
Once that requirement is met, accumulated warmth drives bud development. Soil temperature matters as much as air temperature, which is one reason stony, free-draining and dark soils tend to burst earlier.
Varieties differ substantially and consistently in timing. Chardonnay and Pinot Noir are early; Cabernet Sauvignon, Riesling and Mourvèdre are notably later, which is a large part of why late-budding varieties are favoured in frost-prone sites.
Site matters within a region: a mid-slope vineyard bursts later and is less frost-exposed than a valley floor, because cold air drains downhill and pools.
Growers have limited control, though delaying winter pruning is associated with delaying budburst by a week or so, which can be enough.
Across many regions, budburst dates have been advancing over recent decades, which is one of the clearest phenological signals of a warming climate.
Why it matters in the glass
It sets the whole season’s timetable, and it is the reason an April frost makes national news in Burgundy.
