Cap management
Skins float during red fermentation. What the winemaker does about that determines much of the wine.
The short answer
Carbon dioxide pushes the grape skins to the top of a fermenting red, forming a solid cap that is no longer in contact with most of the juice. Cap management is the family of techniques for putting them back in contact, and the choice among them influences extraction, temperature and microbial safety.
Overview
Left alone, a red fermentation separates into liquid below and a compacted raft of skins above. Nothing useful happens at that interface, and the exposed cap dries out and becomes a home for spoilage organisms.
So the cap is worked, several times a day, for the duration of fermentation. How vigorously and how often is one of the most consequential stylistic decisions in red winemaking, and it is entirely invisible from the label.
How it works
The mechanism, at the scope it has actually been established.
Working the cap serves four purposes at once: it extracts colour, tannin and flavour from the skins; it releases heat from the cap into the liquid; it introduces oxygen, which yeast need; and it keeps the cap wet, which limits spoilage.
Those purposes can conflict. More extraction may be wanted and more oxygen may not, which is why the technique is chosen rather than the frequency simply increased.
Extraction is not linear over time. Anthocyanins are extracted quickly and early, largely within the first few days; tannins extract more slowly and continue throughout and beyond fermentation. So the same amount of work early and late in a ferment produces different wines.
Rising alcohol also changes what is extracted, because ethanol is a better solvent for the larger phenolic compounds than water is. Late-fermentation working therefore favours tannin over colour.
Why it matters in the glass
It explains why two producers with fruit from the same vineyard reliably make different wines, and why a Burgundian approach applied to Bordeaux fruit would give something unlike either.
Step by step
1 Pump-over (remontage)
Juice is drawn from the bottom of the tank and sprayed over the cap. Gentle, easily controlled, and introduces oxygen readily — the standard approach in Bordeaux and in most large-scale production.
2 Punch-down (pigeage)
The cap is physically pushed down into the liquid, historically by foot and now usually by plunger. More vigorous extraction, less oxygen, and the traditional method in Burgundy.
3 Rack-and-return (délestage)
The entire liquid is drained off into another vessel, leaving the cap to settle and drain, then pumped back over it. Powerful extraction and heavy aeration; also separates seeds, which can reduce harsh tannin.
4 Submerged cap
A grate holds the cap below the surface for the whole fermentation. Gentle, continuous, low-oxygen extraction, used for wines where a lighter touch is wanted.
5 Rotary fermenter
The tank itself rotates, mixing continuously. Efficient and used at scale; easy to over-extract with.
Comparisons between techniques are hard to run cleanly, because each is normally applied by producers who differ in every other respect too. Claims that one method is superior should be read as stylistic preference.
No cap management technique is demonstrably better than another. Each has a purpose and a cost, and producers choose according to the wine they intend.
