Native yeast or cultured yeast

Letting the resident population ferment, or adding a selected strain — what each actually changes, and what the evidence does and does not support.

The short answer

A cultured yeast is a selected strain added to the must in quantity, which dominates the fermentation from the start. A spontaneous fermentation lets whatever is present take over, beginning with a succession of non-Saccharomyces species and finishing with Saccharomyces regardless. The trade-off is predictability against complexity, and the complexity claim is less well established than its advocates suggest.

Overview

This is one of the most ideologically loaded decisions in winemaking, and it is worth separating what is known from what is asserted.

It is also frequently misdescribed. Spontaneous fermentation is not the absence of a decision: it requires a clean, warm, microbiologically healthy cellar and a producer who monitors it closely.

How it works

The mechanism, at the scope it has actually been established.

Inoculation adds a large population of a known strain, which outcompetes the resident flora almost immediately. Fermentation starts fast, runs predictably and finishes reliably.

Spontaneous fermentation begins with Hanseniaspora, Candida, Metschnikowia and others, which contribute their own metabolites for the first days before ethanol suppresses them. Saccharomyces then completes the ferment.

The compositional consequences are measurable. Spontaneous ferments generally show higher concentrations of some compounds, including glycerol and certain esters and higher alcohols, and differ in volatile acidity.

The risks are also real: slower starts, greater vintage-to-vintage variability, higher chance of sticking, and more scope for spoilage organisms including Brettanomyces to establish.

The resident population in an established winery lives substantially on equipment and building surfaces rather than arriving on the fruit, which considerably weakens the claim that spontaneous fermentation expresses a vineyard.

What is not settled

Whether spontaneous fermentation produces wine that tasters prefer is not established. Trials find compositional differences; preference results are inconsistent, and most comparisons are confounded because the producers choosing spontaneous fermentation differ in many other respects.

Where the story and the evidence part company

The claim that native yeast expresses terroir is not supported by the microbiology, since most of the resident population is a property of the cellar rather than of the vineyard. WineHQ presents this as a real technical choice with real trade-offs, and neither approach as superior.
