Rotundone

One of very few wine aromas traced to a single identified molecule. It accumulates in cool conditions and degrades in heat, which is why cool-climate Syrah is peppery and warm-climate Shiraz is not.

A significant minority of people cannot smell it at all, so the pepperiness of a wine is genuinely not the same experience for everyone.
