Sulfites
Present in almost all wine, since fermentation produces some naturally. Added quantities protect wine from oxidation and spoilage. Labels must declare their presence above a threshold.

The widespread belief that sulfites cause headaches is poorly supported. Dried fruit contains far more. Genuine sulfite sensitivity exists but is rare and presents as an asthmatic response.
