Smoke taint becomes a recognised risk

Major bushfire and wildfire seasons turned a curiosity into a category-scale commercial risk, and drove the research that explained it.

What happened

Smoke exposure damaging wine was recognised anecdotally long before it was understood. Serious research began after major Australian bushfire seasons in the 2000s, notably 2003 and 2009.

The critical finding was that grapes bind much of the absorbed volatile phenol load into odourless glycosides. That explained why fruit could taste clean at harvest and the wine develop ashy character months later — and why smelling the grapes is not a valid assessment.

Californian and Oregon wildfire seasons, particularly 2017 and 2020, brought the issue to North America at scale, with substantial quantities of fruit left unharvested and entire vintages declassified or not made.

Testing capacity, risk protocols and remediation research have developed quickly, and remain imperfect. Reverse osmosis and activated carbon treatments help and cost the wine something.

It is one of the most direct wine-facing consequences of a changing fire regime, and it is best understood as a risk that must be managed rather than a problem that has been solved.
