Smoke taint

How wildfire smoke reaches wine, why it can hide until after fermentation, and what growers can and cannot do about it.

The short answer

Grapes exposed to wildfire smoke absorb volatile phenols through the skin. The vine binds much of the load into odourless glycosides, which can release later during fermentation and ageing — so a wine can smell clean at harvest and develop ashy, medicinal character afterwards.

Overview

Smoke taint has moved from a curiosity to a major commercial risk in Australia, California, Oregon and elsewhere, and it is one of the clearest wine-facing consequences of a changing fire regime.

It is also a good example of research moving quickly: the understanding of bound glycosides substantially changed how the risk is assessed.

How it works

The mechanism, at the scope it has actually been established.

Smoke contains guaiacol, 4-methylguaiacol, cresols and syringol among other volatile phenols, produced by the thermal breakdown of lignin in burning vegetation.

Grapes absorb these compounds through the skin. Exposure closer to harvest is generally associated with greater impact, and the effect is not simply proportional to visible smoke — brief dense exposure and prolonged light haze behave differently.

The vine conjugates much of the absorbed material into glycosides. These are not volatile and not perceptible, which is why smelling or tasting the fruit is unreliable as an assessment.

Fermentation and subsequent acid hydrolysis release a proportion of the bound compounds, and release continues slowly in bottle. Character can therefore intensify over months.

Assessment relies on laboratory measurement of both free and bound forms, together with small-scale trial fermentations, rather than on tasting the grapes.

Mitigation options are limited and imperfect. Reducing skin contact, avoiding whole-bunch fermentation, and treatments including reverse osmosis and activated carbon have all been used, each with costs to the wine. In severe cases the fruit is not harvested.
