Minerality: what the evidence actually shows
A word almost every taster uses, no agreed chemical definition, and no demonstrated route from vineyard rock to matching flavour.
The short answer
Minerality is a widely used sensory term with no agreed chemical definition and no demonstrated mechanism linking it to minerals in the vineyard soil. The perception is real and shared; the geological explanation for it is not established.
Overview
This page has to do two things at once, and the temptation is to do only one. It must not tell readers their own perception is imaginary — a great many experienced tasters use the word and agree about which wines deserve it. And it must not endorse an explanation that has never been demonstrated.
Both halves are true: something is being perceived, and the usual story about what it is does not survive examination.
How it works
The mechanism, at the scope it has actually been established.
The direct-transfer account fails on basic grounds. Mineral ions taken up by a vine are present in wine at concentrations far below sensory thresholds, and they are not volatile, so they cannot contribute aroma at all.
Studies asking tasters to identify wines by soil type, or to agree on what minerality means, have generally found poor agreement even among professionals. The word is used consistently by individuals and inconsistently between them.
Several candidate explanations have been proposed and none has been established. Higher acidity and low pH; reductive sulfur compounds at low concentration; succinic acid; low levels of certain phenolics; and simply the absence of overt fruit, oak or residual sugar leaving other things audible.
What soil demonstrably does is physical and substantial: drainage, water-holding capacity, depth, heat retention and rooting constraints all influence vine water status, ripening rate and vigour. Those effects are real, measurable and important — they are simply not flavour transfer.
Why it matters in the glass
It is the highest-profile place where wine writing asserts a mechanism nobody has shown, and correcting it does not require taking anything away from the reader.
A reader who wants "mineral" wines is still well served: the wines that get called mineral do have things in common, and WineHQ can recommend on those grounds without endorsing the geology story.
