What soil actually does for a vine — which is mostly about water and heat, not flavour.
Overview
The demonstrable effects of soil are physical: how well it drains, how much water it holds, how much heat it stores and reflects, and how deeply roots can penetrate.
Bordeaux's left-bank gravel drains sharply and radiates stored heat, which is what lets late-ripening Cabernet Sauvignon succeed there. The right bank's cool, water-retentive clay suits earlier-ripening Merlot. That is a real mechanism.
Slate in the Mosel warms quickly and holds heat overnight. Volcanic sand on Etna and Santorini drains freely and resists phylloxera. Chalk beneath Champagne stores winter water for dry summers.
What is not established is direct mineral transfer producing flavour. Vines do take up minerals, but in quantities far too small to taste and not in forms that would generate those aromas.
